The short answer: lettuce is extremely limited right now, so the best move is to talk to your rep early, adjust the menu around what is available and avoid paying more by swapping smartly.

What is happening in the market

The Fresh Alliance report for October 29 rates romaine and hearts, green leaf, red leaf and Boston/butter lettuce as extreme. Quality is described as fair on most, and the report cites disease, insect pressure, high core and soil concerns on romaine. Cabbage and napa are also tightening.

Ways to adjust without raising plate cost

  • Build a salad around what is steady. Ask your rep which greens and slaw bases are available at a fair price.

  • Change the format. Shaved or shredded greens stretch further than whole leaves.

  • Lean on other crunch. Cucumbers, carrots, radishes and shredded cabbage can carry a salad or garnish.

  • Shrink the plate garnish. A smaller leaf under a sandwich or burger can cut lettuce use without changing the dish.

  • Order prepared product. Chopped and packaged greens cut waste and labor, which matters when product is expensive.

Talk to your rep before you run out

Tell your rep which dishes use the most lettuce and what you can swap. They can flag alternatives and plan your delivery days around what is coming in.
